Meatless Mondays {weeks 14 & 15}

Hi Everyone,

First off I would like to apologise for being a bit rubbish in my blogging frequency in the past couple of weeks, I have therefore decided to roll week 14 & 15 into one blog post.

It’s been somewhat hectic with finishing off the kitchen and putting everything back in its new home (still a bit of a work in progress but almost there), then there was the lead up to my Birthday party (which I still haven’t mastered the chilled out way of planning) –  to be fair though we always seem to have some massive project or another on at this time of year and I ended up working the day before as well, which was not the one in terms of timing but was a fascinating day.

We now literally just have a couple more bits to do, putting up the blind which has arrived and is sitting in the hall, creating the cuddy for the trays and putting up the picture wall. The two former are waiting on our handyman who says he will be with us in a couple of weeks and the latter I can kind of get to when I get to as it isn’t taking anything away from it.

I’m just letting it sink in that we actually have a new kitchen, I’m starting to really cook again and try new recipes. I’m so excited when I get the chance to be and home and enjoy it. So that’s what I’ve been doing this weekend and I love it even more 🙂 – it is only therefore apt that my quote of the week {fortnight} should be…

I did another veggie pancake number… (very similar to wk3) This time just with different veg. I also used coconut butter as my fat, I love this stuff – it just makes everything so tasty and apparently is superfood good for you too!

      Thank you. You will indeed 😊, planning to do it next weekend, just waiting for the handy man to finish off the cubby and put up the blind before doing the big reveal x
