So we’re into week 3 of Meatless Monday and here’s what I had today:
Breakfast:
Granola & fresh lemon, honey and ginger
Lunch:
Jam jar of salad, small pot of leftover curry from wk 2 (which had been in the freezer) – it was a lot tastier when I reheated it interestingly, perhaps the flavours just needed some time to take. A Tunnocks Dark Chocolate Caramel Bar, flat peach and apple. To drink: I take to work with me every day a re-usable cup of squash/cordial (I am always on the look out for ones which don’t contain aspartame as it is both controversial and scary, as with most additives which we know so little about, I’d rather go natural wherever possible and I will always opt for natural whenever I have the option when it comes to food. Squashes I have found which are both lovely in taste and in their natural ingredients list are: Belvoir Cordials (Elderflower is the one I’ve tried and liked but the others might well be nice too, watch out for ginger ones though – they are all pretty strong), Blossom Cottage is another nice brand to look out for, I particularly like their Morello Cherry one, Blossom Cottage seems to be linked to Bottle Green though and they are the kings of organic drinks and have lots of lovely options to pick from, favourites include their Pomegranate & Elderflower, Strawberry and their Elderflower cordial. I have actually come across a surprising new fave in my house though at ASDA, pictured below, their orange and mango high juice does not have any fake sugars in hurrah! – rare for a – to do this and worth pointing out. I also take with me a Thermos of Lady Grey Tea each day 🙂
Dinner:
I got in late last night and so had some left over pancake batter from the weekend and thought – right – veggie pancake, complete experiment but it worked really well and was very tasty.
I always use the same batter recipe which I learnt from a children’s cookbook years ago but it always works perfectly and is super simple: milk and egg together equal to 250ml + 100g plain white flour whisked 🙂
So I thought the veg could do with some flavour so I did broccoli, red pepper and garlic fried off in a little coconut butter (this stuff is great, good for you, organic and lasts for ages in the cupboard) with a little salt and pepper in the same frying pan I was going to use for the pancakes themselves. Then I emptied this out into a bowl and made my pancake, turning only when I the raw batter has completely gone from the first side. Then put some red pesto as a base followed by cheese followed by veg and a little more cheese (my cheese of choice was grated edam) and then folded over and enjoyed 🙂 yummy in my tummy – definitely would do this again.
