I’ve decided to do a throwback foodie food post – to re-share with you an absolute favourite recipe to bring some much needed sunshine to your dinner time. It’s lovely, fresh, healthy and super tasty food.
This was an experimental idea which I developed from my beautiful Anna’s meal she made me donkey’s years ago using what she had in her cupboard, but it actually turned into my favourite way to cook salmon and over a decade later it is still the way I do it 🙂
Grilled Salmon & Pasta Salad
Ingredients
- 4 Salmon Fillets
- A good shake Sweet Chilli Sauce or Tabasco sauce
- 1 chunk Lemon
- 1 clove garlic
- 1 handful fresh herbs from the garden (eg. sage, basil, coriander, thyme, oregano – whatever you have will mostly work)
- 1 slice fresh ginger
Instructions

I blended these all up together in my mortar and pestle (obviously with the exception of the salmon)

I then spread evenly on the salmon fillets…

… and grilled for around 10 minutes until nice and golden on top

Whilst these were cooking I cooked up some pasta and cut up some salad, whatever you have in the fridge is fine, for me today that was Abel & Cole lettuce, carrot, tomatoes & sunflower seeds. I then tossed the salad and pasta together well with your favourite salad dressing.

Then simply served with a piece of grilled salmon on top
