Meatless Mondays {week 17}

So we’re into week 17 of Meatless Monday, I’ve kinda fallen into a pattern of doing a bit of a week’s synopsis along with posting what I’m eating in each Meatless Monday post. I hope you continue to find it interesting as a result. I am a bit social media obsessed, especially with Pinterest, Facebook and Instagram, I just love following and communicating with interesting people and their inspiring ideas and also sharing beautiful photography too. My quote of the week is connected to this thought – as it really just spoke to me this week…

I am so very blessed with the people I have in my life, I really to have such inspiring souls in all walks of my life and I have so much love for them and count my blessings every day. This may be a soppy point but it is so so true.

We rounded up the end of last week with a double date round a couple friends house and then I had a baby shower of a family friend during the day on Saturday and a takeaway and games night with an amazing bunch of girls on Saturday night – where we literally laughed till we cried – very good times indeed. Sometimes life throws you curveballs, challenges which you struggle to cope with big and small but when you have amazing support and love from your friends and family it really does give you incredible strength to get through. I’m a true believer that your friends are the family you pick for yourself too, my friends are incredibly important to me and very much part of me, so I just wanted to take a moment to count my blessings, I am very blessed to have the amazing family and friends which I do and would like to say thank you to all of you.

The final thing I would like to share before I get on to the recipes is a lovely photo which was shared by a Facebook page I follow called Green Renaissance which just made me smile and so I hope it makes you smile too…

Right, time for some food….here’s what I had today:

Breakfast:

Lunch:

Dinner:

For dinner it was time to get inventive I know I really wasn’t again last week (sorry), so I racked my brain for what I had in which I could cook nice and quickly after yoga and I though – ah I have a pepper left, I can do stuffed pepper with couscous – win! This is how I did it…

Stuffed Peppers

This method feeds 1 but could easily be duplicated. Also you can use any leftover veg/ herbs you fancy to add into the cous cous.

Ingredients

  • 1-2 Bell Peppers top cut off and seeds scooped out
  • 1 cup Cous Cous or a pack of flavoured cous cous, cooked to the pack instructions (usually to sit in around 150ml of kettle boiled water, with a plate over the top, for around 5 minutes until it has puffed up and then fork through)
  • 1 clove Garlic finely chopped
  • 1 Carrot topped and tailed and grated
  • 1 Mushroom diced
  • 2 Sundried tomatoes cut up with scissors – if not included in pre-mixed couscous
  • 1 handful Cheddar Cheese grated for topping
  • A little Olive oil and or butter for cooking
  • Salt & Pepper to taste

Instructions

  1. Set oven to 180'C

  2. Add a little olive oil to scooped out pepper and bake for 10 minutes

  3. Cook up the diced up carrot, garlic and mushroom, and sundried tomatoes in a little butter and season to taste with salt and pepper

  4. Mix with cooked cous cous

  5. Take pepper back out of the oven, fill with cous cous mixture and top with grated cheese, then bake for a further 20 mins before serving and enjoying 🙂

Ingredients (with links of where to buy):
1.5 Bell Peppers
1 Leek
1 Carrot
1/2 Vegetable Stock Cube
1 cup of Couscous 
1 tsp of Coconut Oil
A few baby tomatoes (diced)
A little grated cheese (for the top)
A handful of fresh Spinach and Balsamic Glaze (to serve)

(N.B. As it turns out these stuffing quantities gave me enough leftovers for 2 lunches – which is no bad thing, so you could either do the same or stuff more peppers – up to you. Also please don’t feel you have to restrict yourself to the veg I used, it’s really just whatever you have in/fancy)

  1. Love stuffing peppers and your recipe looks great. I couldn’t help noticing that your dessert was the largest feature on your lunch! 🙂 The owl photo was fun. Have you ever tried cauliflower rice or cauliflower pizza crust? I’d be interested. Thanks for sharing.
