So we’re into week 5 of Meatless Monday and here’s what I had today:
Breakfast:
Actimel, Granola and organic semi skimmed milk and fresh lemon, honey and ginger
Lunch:
Jam jar of salad, small pot of leftover curry from wk 2 (which had been in the freezer). A Tunnocks Dark Chocolate Caramel Bar, 2 nectarines and a plum
Dinner:
I thought I would cook an old {summertime especially} favourite: Brie and Tomato Pasta which I believe was originally from my 101 pasta and noodle Good Food Magazine books (all these books are worth getting, they’re such good value (usually under a fiver each) and have countless yummy easy cook recipes in them and there is a whole series of books. {Good Food Magazine‘s website is also an excellent resource for recipes as you can search by ingredient if you have something and you don’t know what to cook – an all too common scenario when you have veg boxes or if someone ever offers you a free ingredient – which I myself never turn down!} The link which I have used to the recipe above is from a different source but seems to be the same recipe.
What I love about this recipe, in addition to it’s lovely summertime freshness, is it was the first time that I discovered I actually like courgettes! Just goes to show it’s what you put with things. It’s also an excellent example of a veggie recipe where the flavours mean you just don’t miss the meat at all. :). So I made a couple of adaptations to the original recipe this time, namely I added some broccoli as I had it leftover, and I used a tin of tomatoes rather than fresh, so that I didn’t use up my entire week of fresh salad tomatoes in one go.
My conclusion on both of these is that I would add broccoli again but I wouldn’t necessarily go for a tin of tomatoes again as I do think that fresh works better – it’s not that it didn’t work, it’s just it wasn’t quite as nice.
To be honest this recipe is also great for if you have a glutton of tomatoes and courgettes, for example if you home grow or have a veg box.
