Meatless Mondays {week 6}

So we’re into week 6 of Meatless Monday and here’s what I had today:

Breakfast:

2 x Chocolate Chip Brioche and fresh lemon, honey and ginger

Lunch:

Jam jar of salad, small pot of leftover brie from wk5 (which had been in the freezer).  A Tunnocks Dark Chocolate Caramel Bar, a nectarine, a flat peach and an apple.

Dinner:

This evening it was a case of making something up with the scraps I had leftover from last week before the week’s shop arrives tomorrow… I quite like a challenge like this and I like it even better when what I throw together actually turns out to be really yummy as it did this time :). So here’s what I had to work with:

Ingredients
2/3 block of haloumi, a portion of frozen pre-cooked basmati rice, a small red onion, some chives from the garden, a courgette, a carrot , some broccoli, 2 cloves of garlic and half a jar of organic red pesto.

Here’s what I did:

  1. Defrosted the portion of rice for a minute in the microwave
  2. Put on two frying pans, one small and one large to heat up on medium heat with a splash of extra virgin olive oil
  3. Diced haloumi and put in the smaller pan, turning occasionally until golden
  4. Diced and added all vegetables, fresh herbs (I also added some basic leaves from the windowsill) to the big pan and cooked through
  5. Then I added the rice and pesto and stirred again
  6. Then added a splash of water and some sundried tomatoes and oil for extra flavour along with cracked black pepper (no need for salt as haloumi is so salty)
  7. Then finally added the haloumi, stirred till well mixed and served
  8. Conclusion = YUMMY! 🙂

And it worked really well for a leftover lunch the following day too.
