Meatless Mondays {week 8}

So we’re into week 8 of Meatless Monday, the kitchen is progressing nicely, we now have a freshly plastered and tiled box in addition to our house in chaos! My quote for this week is one of my absolute favourites from the amazingly wise Dolly Parton… (which I actually have hanging up in the hall)

In an effort to dance in the rain I have decided to not beat myself up if I don’t manage to cook, or even make a pack lunch whilst we’re in the middle of this kitchen refurb with dusk and possessions just everywhere, I’ve decided to take a leaf out of my husband’s so-laid-back-he’s-horizontal attitude and just go day by day and if I manage to make myself lunch then fine and if I don’t then I will just treat myself to a bought lunch for the, hopefully, short-term 🙂

Here’s what I had today:

Breakfast:

I had a bowl of Apricot Wheats with Organic Semi Skimmed Milk, an Actimel & some tropical juice from the milkman too.

Lunch:

So today I wasn’t up for making lunch before work but this worked out as a blessing in the end as I discovered a new veggie lunch option from the very lovely Cafe Bookshop at work:

Meze

The word is found in all the cuisines of the former Ottoman Empire and comes from the Turkish meze “taste, flavour, snack, relish”, borrowed from Persian مزه (mazze “taste, snack” < mazÄ«dan “to taste”).[2]

It’s basically a lovely selection of yummy bits and pieces which are served all together in a taster format.

I then just had some cherries and raspberries and a packet of quavers too.

Dinner:

 

For dinner, I got in from yoga at 8.30pm as usual and my other wonderful next door neighbours (on the other side to last week) said I could use their facilities to make a jacket potato cheese and salad. I tell you good neighbours are such a Godsend I don’t know what I would do without them, they’re so so lovely, living in a village community, with lovely neighbours completely transforms your life.

So I turned up with a raw potato, some cheese, butter, mayo and salad and used their facilities to cook and eat my dinner 🙂 and I count my blessings for being able to do so. I do love a jacket potato, cheese and salad, it’s such comfort food but is always delicious and so simple to cook and healthy (in the main too 🙂 )
