As I try to start cooking some different things from scratch and do a bit of meal planning too I’m going to share with you all my successes along the way to encourage you to cook – or at least enjoy good food too 🙂 This recipe was my 1st in the recent manifestation of cooking more new recipes/ actually using many many recipe books – and it was a success; the whole family ate and enjoyed it and I had enough for leftovers too :), and surprisingly you make the whole thing in the microwave! Hope you enjoy it too.
Moroccan Lemon Chicken
Ingredients
- 1 kg Pack of boneless, skinless, chicken thigh fillets
- 1 Onion chopped
- 3 Garlic Cloves finely chopped
- 2 tbsp Olive/ Rapeseed Oil
- 1/2 Lemon finely chopped
- 1 jar Green Olives
- 250 ml Stock chicken or veg/ homemade or powder
- 1 large handfill Fresh Corriander chopped
Pilau Rice Seasoning (if you are using ready mixed you need 1 tbsp)
- 1/2 tsp coriander seeds
- 6 cardamom pods
- 1 tsp cumin seeds
- 8 cloves
- 1 cinnamon stick
- 1/2 tsp ground turmeric
- 1/2 tsp black mustard seeds or full grain mustard
Instructions

If making the seasoning from scratch, put all the ingredients for it into a pestle and morta and then crush and blend well with a swig of the oil you're using

Toss the chicken with the onion and the seasoning, garlic and remainder of the oil in a microwave dish with a lid (propped slightly ajar) and cook on high in your microwave for 8 mins (stirring half way)

Add in the lemon and olives and mix well, then add in the stock, before returning to the microwave for a further 20 mins on high, until the liquid is bubbling and the chicken is fully cooked

Stir in freshly chopped coriander, serve (I did with rice, but it would work with potatoes or naan bread too) and enjoy.
