



I was so happy to have found a recipe which works at last that I had to share it with you. This recipe is based on this Taming Twins Recipe (if you’re yet to discover her, Sarah has the most delicious family and budget-friendly recipes, and she has just brought out her first cookbook too, I am a big fan of her stuff), with as ever a few adaptions. It is perfect for using up unwanted veg, sticking to a budget and making something simple and nutritious for lunch or a light meal and it’s great for guests too – hope you enjoy.
Slow Cook Vegetable Soup (based on Taming Twins)
Ingredients
- 1 Onion diced
- 3-4 Carrots diced
- 1 Parsnip diced
- 1-2 Leeks diced
- 2-3 Cloves Garlic peeled & diced
- 4 Stalks Celery diced
- 1 tsp Rock Salt
- 1/2 tsp Ground Black Pepper
- 1 tsp Turmeric
- 1 knob Butter
- 2 tsp Marigold Stock Powder
- 600 ml Boiling Water
- 150 ml Single Cream
- A good shake Italian Seasoning or fresh herbs you have growing
Instructions

Dice all your veg and garlic and fry off in the butter in a frying pan until they get a little colour on a fairly high heat (on my induction hob I put it on 12)

Tip into slow cooker, then add salt, pepper, turmeric, stock powder and Italian Seasoning, and water and cook for 4 hours on high

Add cream, blend, serve and enjoy
