Meatless Monday {2020 – week 34}

So here we are: week 34 of Meatless Monday 2020… The last week in August ending in the August Bank Holiday when we went away as a family, hence why I’m sending out this post a little later in the day this time as I didn’t want to be working on our family holiday 🙂

Here’s what we wore:

Boys: Jeans/ Chinos and Hoodies: Various sources/gifted/thrifted, T-shirts: TU Sainsburys & Kids Monsoon, Trainers: Clarks

What’s in my ears:

I’ve been a bit obsessed with this tune this week. I so miss going out dancing, no idea when we’ll be finally able to do this again. I hope it doesn’t disappear permanently as something which people want to do. When you hear a tune like this you just want to dance, wherever you are, even if you are alone in the shower 🙂

Here’s my week in 4:
  1. It takes a village: I am such a believer in this saying… We are so lucky to live where we live in such close proximity to our wonderful friends and family. I honestly don’t know what we would do without them. What I love though is how everyone who helps us with the boys brings their own magic to their lives. My Mum is such a creative, she was a primary school teacher her whole working life and she brings so much of that to Grandparents days, which I am so grateful for. This week they created this wonderful piece of artwork together based on the book which they had been reading for the past few weeks The Lighthouse Keepers Lunch, which is now into its 40th years anniversary edition, the boys just loved bringing the story they’d been sharing to life in art, well you can tell from the joy on their faces can’t you 🙂
  2. Back Garden Progress: We’re in the process, with help of our lovely local gardeners, of boxing in our wild flower bed using some scaffold planks and pallets which I salvaged. I’m so happy with the progress this week, can really see this little mini project coming together 🙂
  3. Back to the Beach: We headed back to Norfolk for the Bank Holiday weekend, to stay at my aunty and uncle in laws cabin with my hubby and the boys, the weather might not have been as amazing as a few weeks ago when we last went but we put on wellies and splash suits and went for it all the same, and by the end of the day the weather had really cleared up and we all had a wonderful time, Happisburgh is one of the nicest British beaches I have found and I plan to write a blog post soon to talk about all the lovely things to do in the area.
  4. A real Lighthouse!: Another wonderful thing about Happisburgh is the stunning lighthouse, I just couldn’t get enough of photographing it, it’s just so stunning there, it’s definitely a happy place for me 🙂

I was so happy when I discovered that season 3 & 4 of This is Us was on Amazon Prime last week! – This week I have carried on watching whenever I can 🙂 Eeek! I love this show! But haven’t had a chance to watch season 3 or 4 yet. It’s just such feel good TV and so well made, it really is the show with the big heart! And I love how there are so many time lines going on at the same time and so you just find out more and more about each character and how they came to be who be who they now as the show goes on. If you haven’t checked it out, I highly recommend you do, seasons 1-4 now available on Amazon Prime 🙂

What we ate this week…

Breakfast:

I did my yoga nidra (well attempted to, but the boys were a bit more awake and noisy than last week, it is hard/impossible really to do it and get value from it when the kids are up and noisy in conclusion, so I’m going to keep it for when they’re not awake going forward I think) I had a tea whilst doing it and when they came downstairs they had their milk and banana. Then we all had hot cross buns and clementine for breakfast 🙂

Lunch:

I had some pringles, leftover, remarkably, from the weekend and a clementine to snack on mid morning and then had some cheese and marmite bagels for lunch. Followed by a couple of my favourite tea biscuits and a cup o decaf earl grey for afters.

Dinner:


In the evening I went out to a restaurant with some of my girlfriends for the first time since lock down. It was so lovely, if a little surreal to go out. We decided to go to a Woburn Thai, a local Thai restaurant near us which always has wonderful service and food and delicious vegetarian options to boot. I went for some vegetarian spring rolls to start with followed by phad thai:

Pad thai, or phad thai, is a stir-fried rice noodle dish commonly served as a street food and at most restaurants in Thailand as part of the country’s cuisine. It is typically made with rice noodles, chicken, beef or tofu, peanuts, a scrambled egg, and bean sprouts, among other vegetables.

I always go for this dish in Thai restaurants (I know I’m not very adventurous) but if it isn’t broke as the saying goes 😉 + I’m not good with chillies so I’d always be safe vs sorry, and this is genuinely a delicious dish to me. This is the first time I had ordered the vegetarian one, there was the option to go with tofu or just vegetable so I went with tofu just to try, but think I would just go vegetarian next time, as didn’t feel the tofu added anything really, other than a bit of an odd texture, but I didn’t miss the meat either. I just love how much lighter it is eating vegetarian, it really doesn’t sit so heavy on your stomach like meat does, it’s definitely another benefit of it all. 🙂

  1. That lighthouse looks beautiful.

    The wild flower bed from your pics looks like it is coming along nicely. Look forward to seeing it finished.

    I’m not a big chilli fan either, not really delved much into Thai food, I will have to look into some pad Thai recipes 🙂.
