

I was meal planning the other week in my mother-in-law’s kitchen so I took the opportunity to go through her recipe books and came across this absolute gem (which is now on my birthday list)…
I mean to be fair it had me at the title “More Taste and Less Waste” – as this is very much my whole ethos to cooking, but I really did find lots of lovely recipes in there and this is just one which I have now cooked several times and it has gone down well with the whole family so thought I would share it with you… I also love that with this recipe 250g of mince beef easily feeds a family of 4, these are the kinds of changes which will really reduce our waste and eating too much meat in an easy and enjoyable way.
Keema Naan Pizza
Ingredients
- 250 g Lean Mince Beef
- 1 Onion diced
- 1 clove Garlic diced
- 2 tsp Mild Curry Powder
- 1 Large or 5 Baby Tomatoes diced/blitzed in a mini if you have fussy tomato eaters
- 100 g Frozen Peas
- Salt & Pepper to taste
- 6 Mini Garlic & Coriander Naan Bread two for an adult portion and one for a child portion
- A few tsp Mango Chutney
- A bunch Fresh Coriander chopped and sprinkled to finish – optional
- 125 g Mozzarella Ball torn
Instructions

Chop veg and put in frying pan with a swig of olive or rapeseed oil

Add mince, peas and garlic, curry powder, salt and pepper and stir on a medium/high heat until nicely browned through

Put your naan in the toaster, and then onto a grill pan from there

Spread with a little chutney and then add mince and torn mozzarella to the top

Put under the grill until golden and bubbling

Add coriander (if using) and serve and enjoy
