So here we are: week 24 of  Meatless Monday 2020… The first week of the boys being back at Nursery and Pre-school for their whole 3 days, we’re pulling ourselves (sometimes kicking and screaming) back into some sort of normal routine, but the boys are thriving both in and out of nursery and their conversations, skills and confidence are expanding every day before our eyes which is beautiful to see 🙂

Here’s what we wore:

What’s in my ears:

One of my favourite playlists I’ve created on Spotify is for the genre Neo Soul, which I love as it is stripped back and soulful vibes which suit any mood so I thought I would share with you this week, I hope you love it too. 🙂

Here’s my week in 4:
  1. Social Distancing Yoga: I was so excited when my yoga teacher Poppy messaged at the beginning of the week to say that she was planning to come back this week with an outdoor social distance yoga. It happened on Tuesday and it was on and off rain but I don’t think any of us cared, it was just so nice to go and physically be in a yoga class again with wonderfully like-minded people and we so enjoyed standing in the car park catching up afterwards. If this is the new normal I think its going to be ok, it gives me hope. 🙂 I’m going to ultimate between this and my Women’s Wellbeing yoga class on zoom as I love both classes in different ways. I met up with my second teacher Sam for a wonderful social distancing walk as well on one of the days when the boys were at nursery. It was such an uplifting conversation we had, I so value friendships like this with people who I can have deep and meaningful conversations with about life and love, it is just simply nourishment for the soul.
  2. Virtual Father’s Day from Nursery: This was so sweet this week, as something I didn’t realise until the boys went to nursery this year is that they always bring you home beautifully handmade gifts for all the holidays, with the pandemic this is not advised right now, so they came up with a lovely virtual solution of taking photos of the boys next to a white board with their message as to why they love their Daddy <3 we were both touched by this gesture.
  3. More interesting social distancing walks: We’re getting into our stride with social distancing walks now and its so nice to safely meet up with small groups again (so far mainly family), this week I went to MK to walk with my parents and to this wonderful church in Willen village which was actually designed by the same person who designed St Paul’s in London. We also managed another walk with my parents and my hubby up this way this weekend, a 3.5 hour one! – The boys walking stamina is seriously impressing all of us. We all just love getting out and enjoying nature. It definitely has been a big blessing of lock-down
  4. Wild Flower Bed: My gardeners have been back doing social distance gardening for a few weeks now and our latest mini project has been creating and preparing this wildflower bed, which was completed on Monday and I seeded Monday evening (using mixed wild flower seeds, sunflowers, foxgloves, forget-me-nots, and poppies and my gardener said “now all you need to do is give it a good soaking everyday” – somebody was obviously listening as it then rained for the rest of the week. I am excited to see how this bed develops. I was inspired by the several wildflower beds which we have on Campus at work each year as part of a local bee conservation initiative, I just love the idea, so I will keep you posted as everything, hopefully, starts to grow and then bloom <3

And PS. I really miss the Trinny and Susanna show on BBC, it was the best and I had several of their books too. <3

What we ate this week…

Breakfast:

I had my tea in the garden, then I made some fresh mint tea (with mint from the garden) to take the breakfast tray upstairs to the nursery, where I had that and they had their milk and then we all had cereal and fruit.

Lunch:

For Lunch I had a packet of cheese and onion crisp and an apple to keep me going mid-morning, as I was starving after being up early for the school run. For lunch I had some leftover pancake batter to use, so I did that with stir-fry veg, which had been diced and fried off in a little oil, salt, pepper and garlic and then with melted cheese. For afters I had Lidl’s answer to a double raspberry and chocolate ice-cream which is actually very nice indeed 🙂

Crepe Pancakes with Stir Fried Garlic Vegetable

Ingredients

Pancake Batter

  • 250 ml 1 free range egg mixed with organic semi skimmed milk
  • 100 g Plain Flour

Pancake Filling

  • Selection Vegetables, whatever you have Examples of ones which work well from past experience: Bell Peppers, Mushroom, Onion, Peas, Carrots, Mixed Leaves, Tomatoes, Broccoli
  • 1 clove of Garlic finely diced
  • Salt & Pepper to taste
  • 1 handful Grated or thinly sliced cheese

Instructions

  1. Mix the batter and whisk well until fully smooth then leave to one side

  2. Dice all veg and garlic before stir-frying

  3. Add a swig of oil to the frying pan and fry off veg, garlic and salt and pepper to taste until golden before setting aside in a small bowl

  4. Meanwhile slice/grate your cheese as needed

  5. Then make sure your pan is nice and hot, before ladeling in a 1 large ladle of batter and cooking your pancake then flipping/turning (depending on how brave you are)

  6. Once the pancake is on its second side, turn down the heat and arrange the veg followed by the cheese on one half of the pancake, then fold the other half over the filling, serve and enjoy 🙂

Recipe Notes

This quantity of batter will make two large crepe pancakes (enough for an adult portion) but this recipe can easily be doubled up if more batter is needed. 🙂

Dinner:

When the boys got in from school I let them have one of these Lidl milk and chocolate bars, which are nice and small but a nice little treat for them after a day at school. I had a small pot of mixed nuts and a slice of toast to keep me going whilst I cooked dinner. Which was for me Amy’s organic gluten-free macaroni cheese with added fresh cherry tomatoes and Italian seasoning and for the boys was their usual beans and toast. We then all had yoghurt and fruit for pudding and I had a cup of rooibos and some matchmakers before bed.
