Apologies for the delay in publishing this week’s post, it’s been one of those weeks. So we’re into week 13 of Meatless Monday, the kitchen is pretty much there! Just final final finishing touches now to do; fitting the cupboard door under the sink, creating a cuddy for trays (once they arrive from IKEA), and attaching the kickboards buying and putting up the blind and completing the picture wall. It’s so nice to be cooking again and now I have started properly planning my weekly meals and food shopping in a bid to be more thrifty and more organised too, read all about it here. Here’s my quote of the week for this week, serves as a good reminder in the chaos of life too, sometimes we can be far two hard on ourselves, far too self critical, just need to remember to stop sometimes, and remember all that we have managed to achieve 🙂 :

For dinner I cooked one of my favourite veggie dishes, which I come back to time and time again, squash and goats cheese pasta, originally introduced to me by my lovely friend Christina, but I have taken it and adapted it along the way. Here’s how you make it:
Squash & Goat’s Cheese Pasta
Ingredients
- 1 Pumpkin/ Butternut Squash/ Other Squash (you can also add in courgettes to bulk out further)
- 2 cloves Garlic
- 1 Onion
- 1 pack Goats Cheese
- Salt & Pepper to taste
- 500 g Pasta shape ones work best
- 1 pack walnuts halves
- A spoonful honey
- A knob butter
- A handful Fresh Sage
Instructions

Dice Squash in to chunks (de-seed, but save the seeds to roast as a nice snack :)) along with onion and garlic and place in a roasting dish in a pre-heated oven (200'C) with a splash of olive all and salt and pepper and roast for 40 minutes, turning half way

10 minutes before the end of the cooking time, put your pasta on to boil for 10 minute (bring water to the boil in the pan with a lid a couple of minutes before this)

Toast your walnuts in a frying pan with a little butter and honey until golden

Dice up your goats cheese ready to go

Once all the components are ready, combine in a large bowl, season with fresh herbs of choice, and serve straight away and enjoy.
(Ingredients: Pattipan Squash, Round Courgettes, Red Onion, Rapeseed Oil, Salt, Pepper, Garlic, Set Honey, Butter, Walnuts, Goats Cheese, Pasta, Basil-from my windowsill)
