

When I was meal planning last week, I knew I wanted to cook a roast chicken at the weekend so I was looking for something a bit different to cook with the leftovers and I came across this One-pot Chicken Parmesan from the Chunky Chef and I thought to myself, a) I love one pot recipes and b) this is something which could easily be adapted to use up my roast chicken leftovers in a bit of a different way, so this is what I did with it…
One Pot Leftover Chicken Parmesan
Ingredients
- 210 g Mozzarella torn
- 1 Box Pulled Leftover Roast Chicken
- 1.5 Jars Marinara Sauce
- 1.5 Jars Homemade Chicken Stock
- 450 g Dried Pasta Shapes of choice
- 1 Carrot Grated
- 1 Onion diced
- 3 Garlic Cloves diced
- A good shake Italian Seasoning
- 1 tsp Stock Powder
- Parmesan Cheese finely grated to taste
- 1 swig Olive Oil
Instructions

Take your large saucepan/ Dutch Oven and add a swig of olive oil followed by onion and garlic & grated carrot, fry off at a medium heat until it starts to colour a little

Add chicken, followed my marinara sauce (I used homemade – which you can find the recipe for on the blog, or you can used shop bought)

Add chicken stock then dried pasta, along with some Italian seasoning & stock powder and bring to a boil

Cook for 15 mins with the lid on, on a light boil

Remove the lid and add mozzarella, and grated parmesan, stir together then serve and enjoy!
…it did kind of evolve as I went along but the result was really tasty and I think will be a firm favourite for using chicken leftovers going forward.
