Marinara Sauce from Scratch with Love!

I was offered a glut of home-grown tomatoes from two different sources this year, My Mum-in-Law and a Work Friend and thought it would be a good chance to make some Marinara Sauce for the first time, I’m so pleased with the result I had to share! I adapted this Ina Garten Recipe, I love Barefoot Contessa on the Food Network (proper comfort foodie watching to snuggle up with), so I knew it would be a good one. Here’s the recipe for how I adapted it…

Marinara from scratch with love

Excellent for using up a glutton of homegrown tomatoes. Quantities given can easily be doubled or halved as it suits you. 🙂 

Ingredients

  • 1600 g Fresh chopped raw tomatoes
  • 2 cloves Garlic
  • 240 ml Red Wine
  • 3 small Diced Onions
  • 1 splash Olive Oil
  • 1 tbsp Chopped Fresh Parsley
  • 1 small handful Fresh Chopped Basil
  • 1 tbsp Dried Oregano
  • 1.5 tsp Salt
  • 0.5 tsp Freshly Ground Black Pepper

Instructions

  1. 1) Heat the olive oil in a large (30cm) pan. Add the onion and saute over medium heat until translucent, 5 to 10 minutes.

    2) Add the garlic and cook for 1 more minute. Add the wine and cook on high heat, scraping up all the brown bits in the pan, until almost all the liquid evaporates, about 3 minutes.

    3) Stir in the tomatoes, parsley, basil, oregano, salt and pepper. Cover, and simmer on the lowest heat for 15 minutes.

    4) Use a hand blender to blend the ingredients down, allow to cool and then jar up ready to store (this would be a great gift to friend or family member in a hamper) I managed to make 4 medium jars from this quantity.
