Ingredients:

  • 1–2 Bell Peppers (seasonal and organic if possible)
  • 1 cup Couscous (200g) – plain or flavoured
  • 150ml (5oz) Boiling Water
  • 1 clove Garlic, finely chopped
  • 1 Carrot, grated
  • 1 Mushroom, diced
  • 2 Sundried Tomatoes, chopped (or pre-mixed couscous with tomatoes)
  • 1 handful Cheddar Cheese (50g), grated (use plant-based cheese for a vegan stuffed peppers recipe)
  • 1 tsp Olive Oil or Butter
  • Salt & Pepper to taste

Instructions:

    • Oven Method: Bake the peppers in a dish for 10 minutes.
    • Air Fryer Method: Place the peppers in the basket and cook for 6–8 minutes.
  4. Prepare the Filling: Heat butter or olive oil in a pan. Sauté the garlic, carrot, mushroom, and sundried tomatoes until softened. Season with salt and pepper. Mix the cooked couscous into the veggie mixture.
  5. Stuff the Peppers: Remove the peppers from the oven or air fryer and fill them with the couscous mix. Top with grated cheese.
  6. Final Cooking:
    • Oven Method: Return to the oven and bake for 20 minutes, or until the cheese is golden and bubbly.
