

So here we are: week 39 of Meatless Monday 2020… The week I turned 37, what a strange birthday it has been this year but simple and wonderful too.
Here’s what we wore:

What’s in my ears:
I went back to the Michelle Obama Podcast this week once I finished listening to EAT PRAY LOVE and listened to her two episodes on mentorship, 1st one from the mentors point of view (where she interviews one of her own mentors) and 2nd where she interviews 3 of her mentees. I found this a fascinating conversation throughout and I love how she really goes into the discussion of the value of both the mentor and the mentee in each relationship and how they both learn from each other. I also love how she says that even if you don’t have a formal mentor/mentee relationship in your own life, there will always be a younger person looking to you as their example of how to be in the world and we should always be aware of that, whether you be in school or work or in any other situation where you come across other humans. This is a fascinating and informative listen as ever this week and definitely recommended… These episodes lead me to re-contact my mentor at work and start up monthly meetings again, which we had fallen out of the habit of since working from home, but I just love talking to her and she is happy to do this monthly so I look forward to getting into this again. I also love the idea, which I coined from Rachel Hollis, of online mentors, ie people who might not know you but who you look up to, I have a lot of these and I think they can be very positive in self development 🙂
Here’s my week in 4:




- Marinara Sauce: I love this recipe ever since I first adapted it. I got a bag full of tomatoes from my brother-in-law & sister-in-law, I had so much in fact that I had to double up my recipe, but it worked out great and as usual I have put them in the freezer (with around an inch gap at the top of the jar) to use as and when 🙂
- 37 is definitely alright: This week I turned 37, it is certainly a weird yr for birthdays, but due to no mass gatherings birthday carry on for much longer with lots of little get togethers along the way and in some ways that’s actually rather nice as you get to talk to your loved ones 121 a lot more, just got to be careful to make some of those meet ups walks and cuppas to make it not too expensive, but that’s fine. This is a photo of what I wore for my birthday date night at the lovely Wheatsheaf near us, we had such a lovely evening and delicious food 🙂
- Hello October: A new month, and a beautiful one, once the rain stops anyway. I love this Anne of Green Gables quote, the autumn colours are definitely one of my favourite things, and crisp bright walks with hot drinks and comfort food to come home to 🙂
- Seriously though with the masks people: This Internet meme made me chuckle this week, but the problem is real – the amount of people I see with their noses out of their masks! Argh! That is all!

I went back to This is US this week and a good way into season 4 now and loving every episode and how the new characters are getting integrated into the tapestry of the show. Its so gripping and so well written feel good and quality TV, shot in a very similar way to Lost, in that the timelines jump forward and backwards in order to get you knowing the characters more and more each episode, I love this as it just continues to grow so organically each episode and you get more and more understanding as you go.
What we ate this week…
Breakfast:
Tea in the garden before the kids got up this week helped my week start well again 🙂 followed by a fresh lemon, honey & ginger for the breakfast tray. We all had cereal (me – granola and the boys apricot wheats) and fruit and the boys had milk. Then after the school run I had another cuppa before work 🙂







Lunch:
For lunch I had some hula hoops and another cuppa (please don’t judge 😉 ) whilst I was making. Then decided to make myself a rainbow omelette, for which I used some frozen broccoli and spinach and some fresh carrot, beetroot and pepper. What I love about this is you can literally use whatever you have in and it does always make a delicious, cheap and healthy meal. For afters I had a twirl and then later in the afternoon, after the school run, I snacked on some matchmakers, a handful of nuts and we each had a clementine too 🙂












Rainbow Omlette
Ingredients
- 2-3 Organic, Free-range Eggs whisked with a splash of milk in a mug with a fork
- Any Vegetable you have available and you like, from potato, to beetroot, to carrots, peas, beans, spinach, broccoli, tomatoes, mushrooms and on and on it goes… diced roughly
- Dab Butter / or oil for cooking
- 1 clove Garlic finely diced
- 1 handful Grated Cheese
Instructions

Dice your veg and fry off in a little oil or butter with the garlic and add salt and pepper to taste (fresh or dried herbs or spices of choice too)

Break 2-3 eggs into a mug and add a splash of milk and whisk with a fork

Pour egg over the veg (once golden) and let it settle in the pan a little

Add grated cheese (or torn if your using slices) and place pan under the grill until the omelette puffs up and goes golden on top

Serve and enjoy 🙂
Recipe Notes
This is a super easy and diverse recipe and is great for breakfast/ lunch or dinner and uses up all the leftover veg in your fridge or even freezer in a super tasty super cheap meal.Â
Dinner:
For dinner I had leftover courgette orzo from the other week and a couple of clementines and the boys had their usual beans on toast. then I went and did the weekly shop, when I got back I had some Greek yoghurt with plums and honey (this is fast becoming a new favourite pud)








Courgette & Orzo Bake
Ingredients
- 1 swig olive oil
- 1 knob butter
- 1 onions diced
- 3 garlic cloves chopped
- 3 courgettes 1 chopped and 2 coarsley grated
- 500 g bag orzo
- small glass white wine or swig of sherry
- 1 litre vegetable stock
- 85 g parmesan grated
- 1 slice white bread whizzed to crumbs
Instructions

Preheat oven to 180C/160C fan/gas

Heat oil and butter in your largest frying pan and fry off diced courgette, onion and garlic and season to taste.

Add the grated courgettes, and turn up the heat. Cook until softened. Stir in the orzo and wine, if using, for a minute, then turn off the heat and stir in the stock, most of the Parmesan

Transfer to a baking dish. Bake for 15 mins, take out of the oven and scatter with breadcrumbs and the remaining Parmesan and bake for 10 mins more. Eat immediately.

I recommend it, it keeps me doing it every week to have a routine with it, of course it doesn’t have to be a monday – just whatever suits you <3
