Meatless Monday {2019 – week 46}

So here we are: 2019 week 46 of Meatless Monday… 

Here’s what we wore:

Me: Long Sleeve top= New Look, Tights = Tescos, Dress = Joules, Cardigan = Tescos, Boots = John Lewis.

Boys: Tops & Jeans =  various 2nd hand sources, including Facebook Selling and Charity Shops, Rocket Shoes George at ASDA (first walkers), Vests = Tescos, Zip up Jackets = George at ASDA

Both of these Maya Angelo interviews are inspiring and amazing, so I’m sharing both with you this week…

In the first of a special two-part podcast, Oprah has a conversation with her beloved mentor, the late poet, author, icon and activist Dr. Maya Angelou. She’s also the woman Oprah called her mother, sister and friend for more than 30 years. Oprah says, “She was there for me always, guiding me through some of the most important years of my life. The world knows her as a poet, but at the heart of her, she was a teacher.” Dr. Angelou discusses her last book, “Mom & Me & Mom,” delving into one of the deepest personal stories of her life: her relationship with her mother. Dr. Angelou shares intimate memories of her childhood, including the nine words her nurturing yet fiery mother said to her that changed her life forever, challenging her to find strength in the face of adversity.

Oprah’s heart-to-heart conversation with the late Dr. Maya Angelou continues. Dr. Angelou shares some of her greatest life lessons on aging brilliantly and living with gratitude. She is moved to tears as she recalls the revelation that changed her life forever, and reveals the best piece of advice she ever received.

Here’s my week in 4:
  1. Passing on our toys: I went up into the loft this week to get the Christmas decs down and also prepare the clothes for the next size and found the boys old walker so offered it to their cousin, she absolutely loved it, it’s so lovely see things you had with your kids be used by the next lot of babes.
  2. The simple joy of running round the kitchen: This is one of the boys favourite things to do right now, especially to Nick Cope songs, I just love watching them do it, and joining in too – pure innocent joy! <3
  3. Farewell lunch with our wonderful Nanny: Lovely, if bittersweet, pre-farewell work lunch with these gorgeous lot to mark us almost coming to the end of having @aprilsparks9 ‘s as our nanny, can’t quite believe it, she’s been with us since the boys were 8 months old and I went back to work and fair to say she is very much part of the family and 100% real life supernanny. We have already set up monthly playdates to keep in touch but as the boys near their 3rd birthday 🎂 it is time to move to another stage (pre-school) in January. Wishing you all the very best beautiful lady, you deserve all the luck, love and happiness the world has to offer. Thank you thank you for all you have done and all you continue to do. Very much love from us all. 🙏🏼❤️🙂
  4. Birthday season begins: In style with our beautiful friend Skye’s Princess Party – topped off with these fab balloon favours. Can’t believe our babies are turning 3! I’m so blessed with this Mummy tribe I have found and such fabulous kids, lovely to celebrate together.
What we ate this week…

Breakfast:

I had a cup of fresh leaf tea, I have been trying to cut out one tea bag a day and substitute with fresh leaf in a diffuser since finding out that most tea bags have plastic in them! – when will it end!

Then the boys had their milk and I had hot buttered multi-seed toast with homemade jam – yum yum! And the boys had apricot wheats and sultanas to take to their Grandparents.

Lunch:

The boys had a cheese and salad bagel with a banana, a clementine and an apple to snack on throughout the day. I had falafel with pesto mayo and salad with some chickpea puffs (these are new this week and are a healthier alternative to crisps which are supposed to keep you fuller for longer and they’re really rather tasty!), an apple, a clementine and a caramel bar to snack on throughout the day.

Dinner:

The boys had their favourite, beans, and toast and yoghurt and fruit for desert. And I had leftover brie and tomato pasta followed by a new fave ice cream from Morrisons – Black Forest – with some fresh blueberries. – yum!

New little spot for recipes which I have done before but then used the leftovers to eat this week so you don’t have to go hunting around for them :)…

Brie and Tomato Spaghetti

Ingredients

  • 1 pack Brie
  • 1 Lemon rind and juice
  • 2 cloves Garlic
  • 3 Courgette diced
  • 1 pack Cherry Tomatoes diced
  • 500 g Spaghetti

Instructions

  1. Put your pasta pan on to boil

  2. Dice your tomatoes, courgette and garlic

  3. In a pan (such as a wok) which can accomodate your pasta once cooked, add a swig of olive oil and then fry off your courgettes, garlic and tomatoes until golden

  4. Put your spaghetti on to cook for 10 minutes once your water is at a rolling boil

  5. Add your lemon juice and rind to your vegetable pan

  6. Dice your brie, ready to add

  7. Once cooked, drain your pasta in a coriander with a mug underneath to capture a little of the cooking water

  8. Add pasta to the wok and a little of the cooking water as needed, then the brie and mix well before serving.
