

So here we are: week 37 of Meatless Monday 2020… This week has been a good week filled with sunshine and friends and family and outdoors living, feeling very lucky this week, I hope you are too 🙂

What’s in my ears:
I decided to pick Eat Pray Love – Elizabeth Gilbert for this months credit from Audible, I absolutely love both the film and Elizabeth Gilbert herself, so I thought it was high time I listened to the book which made her so famous! And to my delight it is read by her too which always makes me enjoy an audible book so much more when it is read by the author, it always has so much meaning :). I am absolutely loving it so far and how much extra information and insight into her true story you get from the book 🙂 – definitely a good use of this months credit. Definitely worth a read.

- Free plums to make jam: A lovely lady in my village messaged me (who I had got some plums from in previous years after asking on our village Facebook page if anyone had any going spare) to ask if I’d like some this year too, of course I said yes and so she dropped me off a huge bag! So it was time to get jamming! Plums and blackberries, both free and sourced from the village 😊❤️. 1600g sugar and 2080g fruit! I ended up with 9 and a bit jars of Jam! That should keep us going for a while!
- Another milestone on Instagram: I hit another milestone on instagram this week – 3K of follows 😀 I am just loving how many like-minded people I am finding to connect with now who care about the environment, and in the words of my sister “being on the right side of history” in general, for anyone who isn’t sure about the potential for positive effect of social media marketing, I’m telling you there is so much good in this world of ours and so many people who care. I just love being part of it all and building a brand to be super proud of all the way through – thank you thank you for your support in helping me build it further <3 it really does mean the world to me.
- Swimming in a pond: As the temp soared at the beginning of this week we were lucky enough to have a play date with my beautiful friend and yoga teacher who has a swimming pond. It really is magical there and so lovely to swim in nature with my boys – such a blessing <3
- Family walks: We ended our week on a high with a lovely family walk in Oak Woods and Stockgrove local to us. It is such beautiful woodland there, and I just love that we’re raising the boys to love nature as much as we both do, it is so important to me and in the words of my husband “one of my favourite things to do” 🙂

I went back to This is US this week and I’m on to season 4 now and there’s several new characters being added to add even more intrigue. Its so gripping and so well written feel good and quality TV, shot in a very similar way to Lost, in that the timelines jump forward and backwards in order to get you knowing the characters more and more each episode, I love this as it just continues to grow so organically each episode and you get more and more understanding as you go.
What we ate this week…
Breakfast:
I had a cup of my favourite tea and the boys had their milk and we all had fruit & teacakes. Then our very kind friend in the village dropped us off a massive bag of plums from her garden so the boys had a couple of those on their walk to school. When I got back from the school run I had a fresh mint tea with mint from the garden.





Lunch:
Mid morning I snacked on a bowl of bacon rasher crisps (which are surprisingly both vegetarian and vegan!), and the two remaining Jaffacakes from the weekend and a cup of tea and cup of water. For lunch I made some veggie crepes, using fresh beetroot and carrots from my neighbours garden and some pepper which I had in the fridge anyway too. Late afternoon, I knew I had a after-work food shop to do so had an apple, a lemon and sugar crepe (with the leftover batter) and a couple of pieces of chocolate to keep me going 🙂


















Crepe Pancakes with Stir Fried Garlic Vegetable
Ingredients
Pancake Batter
- 250 ml 1 free range egg mixed with organic semi skimmed milk
- 100 g Plain Flour
Pancake Filling
- Selection Vegetables, whatever you have Examples of ones which work well from past experience: Bell Peppers, Mushroom, Onion, Peas, Carrots, Mixed Leaves, Tomatoes, Broccoli
- 1 clove of Garlic finely diced
- Salt & Pepper to taste
- 1 handful Grated or thinly sliced cheese
Instructions

Mix the batter and whisk well until fully smooth then leave to one side

Dice all veg and garlic before stir-frying

Add a swig of oil to the frying pan and fry off veg, garlic and salt and pepper to taste until golden before setting aside in a small bowl

Meanwhile slice/grate your cheese as needed

Then make sure your pan is nice and hot, before ladeling in a 1 large ladle of batter and cooking your pancake then flipping/turning (depending on how brave you are)

Once the pancake is on its second side, turn down the heat and arrange the veg followed by the cheese on one half of the pancake, then fold the other half over the filling, serve and enjoy 🙂
Recipe Notes
This quantity of batter will make two large crepe pancakes (enough for an adult portion) but this recipe can easily be doubled up if more batter is needed. 🙂
Dinner:
I snacked on these Bruschette Chips (from Lidl) whilst cooking, they taste like little mini pizzas – yummy 🙂
For dinner, I had seen an idea on instagram to do a creamy spinach pasta, which looked really good, so I bought the stuff and then only when I taste tested I realised I wasn’t keen on the taste of spinach on its own like that, so I went about adding a few extra ingredients in order to save the dish. I added some sun-dried tomatoes chopped up, a couple of spoonfuls of red pesto and lots of Parmesan, in the end it was pretty good 🙂
I had a cup of rooibos tea before bed.

Those plums looks amazing! I’m quiet envious. Mine have gone into gin rather than jam as I still have mountains of jam from last year.
My courgettes have started flowering again out of nowhere. Hoping I’ll get a few more for the table before we get a frost.
Hey 🙂 They were such a blessing, but I did struggle to get a setting point unfortunately, I think maybe I added too much water, so will fiddle around next time with quantities, also apparently a jam thermometer is a worthwhile investment. 🙂 I planted my courgette pretty late, but it’s flowering now so hoping to get some off it too 🙂 Are you making sloe gin? xx
