
So here we are: week 46 of Meatless Monday 2020… 2nd week of isolation, 2nd week of pre-school being closed, 2nd week of being a “stay at home Mum”… I did a home test on the boys over the weekend as they had little colds, just to be safe, and luckily they came back negative, once they did we went on some isolation walks in the country, and they definitely saved us mentally this week! I am looking forward to getting some normality back in the coming week.

I went back to a fave Podcast this week, Jenna Kutcher’s Goal Diggers Podcast… and stumbled upon this historic episode recorded back in June 2017 where she interviews Jess Lively about following your intuition….
Today, my mind is totally blown while I interview Jess Lively of The Lively Show. - Mama, you were given these children… This has been a tough couple of weeks, with the pre-school closing with little notice due to a positive covid case, and when these events occur I again get re-caught up in the surrealism of 2020 and how crazy a year it has been and how if you said it all as a story to yourself a year ago you would just never believe it! Anyone else feel that way? We have muddled through these 2 weeks best we can, there has been a lot of TV, a lot of being trapped in the house, but a lot of love! And I think I am starting to learn to be kinder to myself when these new curve balls come. Are the kids happy and healthy?? – yes – well honestly that’s all that matters. 🙂 I just love this quote and feel its a good reminder to share with you at this time.
- Carrying on my Eco Swap Journey: I’m trying to make little changes to things I buy every time I buy thing, trying hard to practice what I preach when money allows, this is my biggest swap this month, as both my shampoo, shower gel and laundry detergent were running out I decided it was time to go bulk! My reason, well, I haven’t ever got on with soap/shampoo bars, but I want an eco alternative to the norm, this way you cut down on your packaging by buying one big container rather than lots of little ones and then you just set up your own refill station. I am personally of the belief that re-fill stations are such a good idea, as are package free shops, but in our area they are only available in the big towns nearby. I just wish the likes of MACE, Co-op group and SPAR would roll out some form of re-fill stations to all their country (village) stores, end of the day this used to be the way all local grocers operated, with bulk produce and big weighing scales and paper packaging, oh how I wish we could go back to this! It just requires change from the top and my fingers and toes are crossed that this will indeed happen at some point, and it would be amazing if every local shop did even one thing re-fill (washing up liquid, cereal, pasta rice, shampoo/shower gel). But in the meantime I’m going to do my own re-fill station and go bulk/re-usable wherever I can, already doing this with toilet roll. I also love how Scottish Fine Soaps do this Shampoo and Bodywash, which covers all bases (I will also use to refill my foam soap dispensers) and it smells amazing too – like the stuff you get in SPAs – in fact it probably is the stuff you get in SPAs and hotels, as the catering industry has been doing bulk forever and a day.
- Launching my Vinted Shop: I decided it is time to start selling underused clothes from my wardrobe and clothes which the boys have grown out of. I have tried various different routes and table top sales in the past, but this time I’m going to do it peacemeal as and when I get time to list and promote on instagram when I add new stuff. So please check out my profile and find yourself a bargain 🙂 – I’ve sold 4 items so far which I am super chuffed with 🙂 – the only way is up. If you haven’t come across Vinted before it is so fab for buying/ selling / swapping – I think (hope) the stigma around 2nd hand clothes is finally lifting and people are seeing what bargains they can get on clothes which have so much more life left in them. I’m also using it a lot to buy kids clothes as Christmas presents, this is a fabulous option to make your pennies go so much further!
- Weekend Walks with the Boys: So nice to get back out on walks this weekend, we just kept it local and out in the sticks but it was just nourishment for our souls. I love that we live in the countryside with such lovely local walks and that the boys love to walk with us. It is such a positive that has come of 2020; getting into walking from our house with the boys and building up how far we walk too – so impressed with my two little people and how far they walk and how much they love nature, in my opinion it is one of the best things you can pass on to your children is a love for nature.

I’ve been a bit addicted to the new season of The Crown this week! It is such a well made, quality and fascinating show. This season is gradually creeping into my own lifetime, as Margaret Thatcher comes to power and Princess Diana enters the family, it’s fascinating to see how it all plays out.
What we ate this week…
Breakfast:
The boys had their milk, vitamins and banana, and then I had my tea in the garden. When I came back in we all had cereal followed by a clementine.










Lunch:
For lunch I started with a pack of paprika crisps and then I had a mushroom and toast omelette and popped some olives in too as I had them, I did melted cheese and marmite bagel for the boys with apple and clementine. For afters I had a rooibos earl grey tea and a cake bar.



















Mushroom & Toast Omlette
(recipe for 1 but can easily be multiplied) Delicious for breakfast, lunch or dinner 🙂
Ingredients
- A Drizzle Balsamic Glaze
- 1 Clove Garlic peeled and finely diced
- 1 Piece Buttered Toast cubed
- 5-6 Mushrooms Diced my favourite to use is chestnut mushrooms
- 1 Knob Butter for the pan
- 2-3 Organic Free Range Eggs whisked up with a splash of milk
- Salt & Pepper to taste
- a good grating of Parmesan
- 1 handful Fresh Herbs from the garden I used chives and these worked very well, but so would basil, oregano, rosemary, thyme, sage – whatever you have 🙂
Instructions

Toast your bread and butter and dice

Dice your mushrooms and fry off in a non stick frying pan with a little butter and garlic

Add your cubed toast and then drizzle over some balsamic glaze until everything in the pan is golden, then add chopped fresh herbs too.

Whisk your eggs with a little milk and then pour over making sure it gets in all the cracks and crevices of the pan and coats fully

Grate over fresh parmesan and then pop under the grill until golden, serve and enjoy



Dinner:
These photos take you from late afternoon through to bedtime 🙂 After we came in from the garden we did a few episodes of super yoga (which are so great to break up the day and get your kids moving)…
Then the boys had a mango yoyo and a banana between them and I had a brunch bar and an apple.
For dinner the boys had bagel and beans, and then a clementine each for afters. I had creamy veg pasta from the freezer and some matchmakers for afters.
